We have been long-time lovers of Hayley's plant-based recipes & being along for the ride on her journey as a young Mama. We chatted about her love for cooking and even got a recipe to share with you!
What inspired your passion for cooking?
I have always loved cooking. Even as a child my sisters and I would pretend we were on a cooking show and bake all sorts of treats. When I became vegan 9 years ago my passion for cooking grew as I started experimenting more with food to make my plant-based meals as tasty as possible. I didn’t want to feel as though I was missing out on delicious food, and I didn’t want my daughter to miss out on essential nutrients, so that’s how I started creating my own recipes - full of flavour and full of goodness.
Method for Hayley’s Fluffy Banana Bread:
1. Preheat oven to 160 degrees Celsius.
2. In a small bowl add milk and apple cider vinegar. Mix and set aside.
3. In a large bowl add all dry ingredients and mix to combine.
4. Add wet ingredients, including the milk mixture, and mix well.
5. Stir in the walnuts and chocolate.
6. Line a loaf tin with baking paper and pour in the batter.
7. Cook in the oven for approximately 1 hour and 20 minutes or until a skewer comes out clean.
8. Allow to cool for 10 minutes before serving. Best served fresh with some vegan butter, or reheated in a sandwich press or toaster.

As a mother of two, how do you balance cooking healthy meals with a busy family life?
Since having my second baby 2 months ago I’ve definitely had my hands full, literally. What has helped so much is planning and prepping. I plan out all our meals for the week and do one big grocery shop so that I only need to go to the store once. This is key for me. At the moment I’m choosing meals that are quick to make, nutrient-dense and meals that make large quantities so that we can have leftovers, that way I’m really only cooking dinner 2-3 times a week. I time breakfast and lunch with my baby’s naps so that I can quickly prepare our meals with two hands, and dinner is usually cooked with my baby strapped to me in the carrier.
